Chicken Fajitas
What's for dinner tonight? Clean eating chicken fajitas! Yes! You can eat chicken fajitas on the 21 day fix! Instead of reaching for a fajita seasoning packet that is loaded with preservatives and sodium why don't you make your own?
Fajita Seasoning:
2 tsp chili powder
1 tsp pink himalayan salt
1 tsp paprika
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp cayenne
1/2 tsp ground cumin
Ingredients:
1 pound boneless chicken breasts
1 Onion
1 Green pepper
Fajita seasoning
Wheat wraps
Shredded cheddar cheese
EVOO or coconut oil
Skip the sour cream, substitute with whole wheat tortillas or romaine wraps and go ahead and use some cheddar cheese!
Directions:
Chop onion and green pepper.
In saute pan heat 1 tbs coconut oil or EVOO. Add onion and cook till translucent. Add chicken cut into strips. Cook until chicken is no longer pink. Add green pepper. Cover and cook down until peppers are cooked through. Add fajita seasoning from above and 1/2 cup of water. Mix together. Simmer 10 minutes on low so seasoning has time to thicken and coat chicken and veggies. Measure portions and assemble fajitas.
