 Clean Crock Pot Chicken Cacciatore

 
Ingredients:
1 tbs ev olive oil
4 large chicken breasts
1 8 oz pkg mushrooms,
1 large onion, chopped
2 cups organic chicken stock
3 cloves garlic, peeled & pressed
1 can of no sodium added tomato paste (I use Hunt's)
1 can of no sodium added diced tomatoes 9I use Hunt's)
sea salt and pepper to taste
1 tsp basil
1 tsp parsley
1 cup water
1 splash white wine (optional)
brown rice
Directions:
Place evoo at the bottom of crock pot. Add chicken breasts. Place vegetables atop. Add the liquids and the tomato paste. Add the seasonings. Cook in the crock pot on low for 8 hours or 6 hours on high. Once Chicken Cacciatore is complete, cook the brown rice.
Serve over brown rice. Use the 2 green container to scoop your portion of cacciatore.

Portions: 1 yellow of rice, 1 red, 1 green, 1/2 purple (tomato)
