Keto Crispy Chicken Tenders

Ingredients:
  • 4 tbs olive oil
  • 2 eggs
  • 1 pound boneless skinless chicken tenders
  • 1 bag pork rinds or chicharrones
  • 1 tsp black pepper
  • 1 tsp basil
  •  1 tsp parsley
  • 1 clove minced garlic
  • 1/4 cup parmesan cheese

​Directions:
Preheat oven to 350 degrees. Crush pork rinds with a rolling pin, pour into a bowl. Add seasonings and cheese to pork rind crumbs, mix. Crack 2 eggs into another bowl and beat. Place skillet on stove top and heat oil.  Dip a chicken tender into the egg wash and then into the pork rind crumb mixture. Pat/cover tender in pork rinds. Place tender in frying pan to fry on both sides. When fried on both sides place into a glass dish. Repeat with all tenders. When tenders are complete cover with tinfoil and place in oven for 25 minutes. Serve with low sugar ketchup, buffalo sauce or condiment of your choosing.
