Ingredients:
1 pound lean ground turkey
1 egg
4 blue (1/4 cup or 1 cup total) containers of feta cheese
1 green container (1 cup) spinach
1/2 tsp onion flakes
1/2 tsp garlic flakes
1/2 tsp ground pepper
1/2 tsp dry mustard
Directions:
Preheat oven to 350 degrees. Grease the wells in a standard cupcake tin. I used coconut oil. Put all of the ingredients into a mixing bowl. Mix by hand until well blended. Scoop with spoon into each well so that it is level with the top of the well. It should fill approximately 9 wells. Bake in the oven for 40- 45 minutes until cooked through. Remove promptly from the wells. Take a butter knife and swipe around the edge and they should pop out.
2 muffins are 1 serving. 1 red, 1 blue, 1/4 green.
