Ground Turkey Stuffed Pepper
1 red cooked lean ground turkey
1 yellow cooked brown rice
Medium green pepper (will be approx. 1 1/2 green containers
1/2 purple Natural tomato sauce, no added sugar (I use Hunt's in the can)
1 blue shredded mozzarella, skim
minced garlic and pepper
Preheat oven to 375 degrees. Cut the top off of a green pepper and hollow it out. Blanch the pepper so it heats through faster in the over. Mix all of the ingredients together in a bowl with half of the amount of tomato sauce and half of the cheese. Add garlic and pepper to taste. Stuff the pepper with the mixture, put the remaining sauce on top and then the remaining cheese.
Cook for 30 minutes or until heated through.
