Keto Cheddar Chicken Broccoli Bake

Ingredients:
  • 4 boneless skinless chicken breasts cooked and shredded
  • sea salt and pepper
  • parsley
  • 1/2 cup of heavy cream
  • 1/2 cup of sour cream
  • 1- 1/12 cups of shredded cheddar
  • 1 bag of frozen broccoli florets
  • cooking spray 
  • 1 bag of pork rinds/chicharrones

Directions:
Preheat the oven to 450 degrees. In a large mixing bowl mix the shredded chicken, sour cream, heavy cream and half of the shredded cheddar. Mix in the frozen broccoli florets. Season with sea salt and pepper, and parsley.  (If the florets are on the larger side you may want to chop some of them down for uniformity and to be able to mix easier.) It is okay to cook the broccoli from frozen, no need to pre cook. Scoop the mixture into a casserole dish sprayed with cooking spray. Spread out evenly. Sprinkle the remaining shredded cheddar over the top. Open a small hole in the corner of the pork rinds bag to let the air out. Crush the bag by hand or with a rolling pin. Open the bag and sprinkle over the top of the shredded cheese. Place in the oven for 20-25 minutes until bubbling.
